Idli ek mazadar aur tandoor-se-banaya cake hai jo chawal aur

hai. Idli mein protein aur fiber ki acchi matra hoti hai aur yeh kam matra mein
fat hai. Yeh iron aur calcium ka bhi accha strot hai.
Idli banane ke liye chawal aur urad dal (ek prakar ki dal) ko
raat bhar bhigo diya jata hai. Chawal aur dal ko alag-alag pees kar ek fine
paste bana liya jata hai. Chawal ka paste dal ke paste se thoda kasar hona
chahiye. Fir dono paste ko milakar 8-12 ghante tak fermente hone diya jata hai.
Jab batter fermente ho jata hai, use khaas idli molds mein
steam kiya jata hai. Idli lagbhag 15 minute tak steam kiye jate hai, ya jab tak
vo puri tarah se pak jaye.

- Chawal ko paani ke saath ek acche paste mein pees lein.
- Urad dal ko paani ke saath ek acche paste mein pees lein.
- Chawal ka paste aur urad dal ka paste ko milakar achhe se mix karein.
- Batter mein namak daal kar achhe se milayein.
- Batter ko dhak kar 8-12 ghante tak ferment hone dein.
- Idli steamer ko pehle se garam karein.
- Idli molds ko tel se grease karein.
- Batter ko idli molds mein daalein, aur unhe lagbhag 3/4 tak bharein.
- Idli ko lagbhag 15 minute tak steam karein, ya jab tak woh puri tarah se pak na jayein.
